When macadamia nuts are first harvested, they contain around 30% moisture—far too high for cracking and processing. At this stage, the nut is still soft and unsuitable for consumption. To ensure quality, macadamia nuts undergo a controlled drying process, reducing moisture levels to around 1.5% before they can be cracked.
